Practical Workshop with Dara Santana
How much can a cup of coffee change simply because of the water we brew it with? 💧☕️
In this hands-on workshop, Dara Santana invites participants to explore the sensory architecture of a cup of coffee. If extraction is the structure of a building, water becomes its interior design – the element that shapes how we perceive flavour, balance and texture in the final cup.
We’ll start by breaking down what actually makes up a cup of coffee and how we describe what we taste, before taking a closer look at water as one of the most powerful variables in brewing.
Through guided comparative cuppings, participants will experience how different water compositions can transform the very same coffee. Then it’s time to move from tasting to experimenting: working in pairs, you’ll brew filter coffee using different water compositions, compare the results and ultimately design your own interpretation of the cup. 💧🧪
And there will be plenty to experiment with. 👀 Dara is bringing a curated selection of coffees from Spain specifically for the workshop, and we’ll also get to work with the official Budapest Coffee Week 2026 coffee – giving participants the chance to explore how different waters interact with different coffees and flavour profiles.
This is not an introductory brewing workshop. The session is designed specifically for professional and experienced baristas who want to dive deeper into the relationship between water, extraction and sensory perception, and take practical knowledge back behind the bar.
